Characteristics

It has a high thermal stability, which means that it can withstand high temperatures without decomposing, making it ideal for the production of candies, chocolates and other confectionery that require cooking or baking processes

Another important characteristic of Isomalt is its ability to crystallise easily, which makes it an ideal ingredient for cake decorating and the creation of sugar figures. Its texture and clarity also make it suitable for the manufacture of transparent lollipops and candies with a visually appealing appearance.

It has been suggested that isomalt may act as a prebiotic, i.e. it may stimulate the growth and activity of certain beneficial bacteria in the gut, which could have positive effects on digestive health and the balance of the gut microbiota.
