About this sweetener - Acesulfame K
Description
Discovered in 1967, acesulfame k is 130 to 200 times sweeter than sucrose and is also used in various applications as a flavour enhancer.
The high stability of acesulfame allows it to be used in cooking without altering its properties. It also maintains the effect that when mixed with other sweeteners it is synergistic, i.e. the sweetening power of the combination is of a higher level than the sum of the sweetening power of the two additives separately.
It is highly soluble in water and slightly soluble in ethanol. It is a product suitable for consumption by diabetics as it cannot be metabolised by the body and is excreted entirely and intact in the urine.

- Sweetener type: Intensive sweetener.
- Main properties: 200 times sweeter than sugar.
- Highly stable at extreme pH, baking and UHT temperatures (Tª, pH and time).
- Solubility Level: Good solubility and fast solubility.
- Combinations: Minimises the persistent sweetness of sucralose, with which it has good synergy because the combination of the two gives a more sugar-like profile. Guideline dosage 30 Acesulfame | 70 Sucralose.
