About this sweetener - Xylitol
Description
Discovered at the end of the 19th century, xylitol is a natural sweetener found in various fruits (strawberries, blueberries) and certain vegetables (cauliflower), as well as in the sap of certain trees, especially birch, which is why it is sometimes referred to as wood sugar.
Xylitol is a naturally occurring sugar, from the polyol family (other terms also used are polyols or polyhydric alcohols), which is extracted from the bark of birch trees in the forests of Finland. Xylitol is also known as birch sugar and has the food additive code E-967.
The main source for this sweetener is birch trees, but it can also be obtained synthetically by the transformation of a fibre called xylan into xylitol.
In the food industry, xylitol is added as a sugar substitute to produce diabetic-friendly or low-calorie products.

- EU Identification: Additive E-967.
- Sweetener type: Intensive sweetener.
- Main properties: Glycaemic index is 7, about 10 times less than regular sugar.
- Around the same relative sweetness value compared to sucrose. Also used as an alternative for sucrose in diabetic foods, because it does not need insulin for its metabolism.
