Description
Sorbitol is a polyols or also known as polyvalent alcohols or sugar alcohols, are carbohydrate systems with about half the calories of sugar and the same volume. It is used in dietary foods.
Characteristics
One of its characteristics is that it is low in calories (2.4 g/kcal) compared to sucrose (4 g/kcal) or table sugar, which is why its sweetening power is also lower. For this reason, considerable quantities must be used to achieve the same sweet taste as table sugar.
It is important to know that this food additive can be consumed by diabetics as it does not affect the glycaemic index, as it is metabolised more slowly than sugar. For the same reason, it can also be used in various sports foods to provide carbohydrates for a prolonged period of time.
Naturally, it is found together with sucrose and fructose in fruits such as pears, apples, cherries and peaches.
It can also be used as a prebiotic by feeding the intestinal flora.
