About this food additive - Xanthan Gum
Description
- Xanthan gum is a polysaccharide produced by the fermentation of sugars by the bacterium Xanthomonas campestris, widely used in the food industry as a thickening, stabilising, and emulsifying agent. It is valued for its ability to provide viscosity and maintain uniform texture in a wide range of products.
- Its commercial use began in the mid-20th century, with applications expanding due to its excellent stability and functionality. Xanthan gum can maintain consistent viscosity across a broad range of temperatures and pH levels.
- It is highly soluble in water and forms viscous solutions even at low concentrations. It also exhibits shear-thinning behaviour, meaning it becomes less viscous when stirred or shaken and returns to its original state when at rest.
- It is stable under normal storage conditions and can be combined with other hydrocolloids to enhance texture, stability, and mouthfeel in food formulations
