Description
- Sodium alginate is a natural polysaccharide extracted from brown seaweed and widely used in the food industry as a gelling, thickening, and stabilising agent. It is especially valued for its ability to form gels in the presence of calcium ions.
- Its industrial use expanded with the development of seaweed processing technologies, enabling consistent quality and functionality. Sodium alginate is commonly applied in products such as restructured foods, sauces, and in modern culinary techniques like spherification.
- It is highly soluble in water, forming viscous solutions even at low concentrations. When combined with calcium salts, it produces heat-stable gels with unique textures.
