Description
- Pectin is a natural polysaccharide extracted primarily from citrus peels and apple pomace, widely used in the food industry as a gelling, thickening, and stabilising agent. It is especially important in the production of jams, jellies, and fruit-based products.
- Its commercial use developed with advances in fruit processing, allowing efficient extraction and standardisation. Pectin forms gels in the presence of sugar and acid, creating the desired texture and consistency in many food applications.
- It is soluble in water under appropriate conditions and can form different types of gels depending on its degree of esterification. Pectin is also valued for its dietary fibre content and its role in improving texture and stability.
